This is my kind of meal! I LOVE pasta and I LOVE lamb! A ragu recipe can take anywhere from two to six hours, depending on how deeply flavored you want your meat sauce — and how traditional the recipe is. We understand that not everyone is ready to spend six hours making a pasta sauce. Depending on how much time you have to devote to cooking, there’s a recipe for you and Sue over at theviewfromgreatisland.com has the perfect one…..

  • 1/2 white onion
  • 2 large shallots
  • 2 cloves garlic
  • 1 carrot
  • 1 stalk celery
  • 1 lb ground lamb

  • 2 bay leaves
  • small bundle of fresh thyme sprigs, plus more for serving
