Let me just start by saying they make the ultimate coffee break snack. My wonderful husband made a batch of these last night and I ate 4 of them. My poor friends will have to wait until we make another batch, whoops. These Apple Crisp Cookie Cups combine classic oatmeal cookies with homemade apple pie filling for the perfect comfort food.
