Elderberry Jam Recipe

The most common use of elderberries is for jelly-making. Their juice produces a clear, ruby-red jewel-like delicacy with a sparkling flavor to match. When you go out hunting elderberries, seek the blue variety (Sambucus canadensis) and not the red (Sambucus pubens) … the latter are distasteful and in some areas even poisonous. Don’t worry about confusing the two, though, for they look quite different. So, what will you need….

Ingredients:

  • Elderberries
  • Water
  • White Sugar
  • Lemon Juice
  • Pectin

Equipment needed:

  • Jelly Strainer & Bag
  • Preserving jars
  • Jam Funnel

Top tip – To strip the elderberries from their stalks. It’s an easy, if long-winded, job and one that’s made much easier if you use a fork.
