Mini Tex-Mex Chicken and Cheese Pies

We love anything that can be whipped up in a Muffin Tin and these Chicken and Cheese Mini Pies will give you serious cred in the kitchen! You can also add your favorite veg if you like. Don’t be afraid to play around with the recipe and come up with your own version.
What you will need: rotisserie chicken, pepperjack cheese, Old El Paso™ diced green chiles (optional!), peppercorn ranch dressing, cilantro, Bisquick™ Original baking mix, milk, eggs and salsa of your choice. If you are not a cilantro fan like several of the members of my family, you can substitute by using flat leaf parsley. It adds a fresh, bright element to the dish.
