I have never seen this dish before, then I googled it and discovered a lot of people have done it before. My bad! We just love quiches and when I came across this recipe, I knew this was a winner. Quiche isn’t just for breakfast or brunch – it also makes a wonderful light spring/summer dinner served with a green salad and a side of fresh fruit. 

This recipe calls for; russet potatoes, kosher salt, ground black pepper, vegetable oil, butter, shallots, eggs, half-and-half, mustard powder, nutmeg, tarragon, Fontina cheese, goat cheese and asparagus. Believe me, those hash browns just became your go-to for a super easy quiche crust!
