This is my kind of meal! I LOVE pasta and I LOVE lamb! A ragu recipe can take anywhere from two to six hours, depending on how deeply flavored you want your meat sauce — and how traditional the recipe is. WHAT YOU WILL NEED

  • 3-4 Tbsp olive oil
  • 1/2 white onion
  • 2 large shallots
  • 2 cloves garlic
  • 1 carrot
  • 1 stalk celery
  • 1 lb ground lamb
  • 1/2 cup good red wine
  • 1 8oz can tomato sauce
  • 3-4 Tbsp tomato paste
  • 2 bay leaves
  • small bundle of fresh thyme sprigs, plus more for serving
  • 1 -2 tsp balsamic vinegar
  • salt and black pepper
  • Parmigiano Reggiano cheese for grating
  • 1 lb papardelle pasta
