How To Make Homemade Fresh Mozzarella

Mozzarella cheese is wonderful – warm, mild, and of course delightfully gooey. Unfortunately, making it from scratch isn’t a spur-of-the-moment endeavor…or maybe it is! This recipe is a “shortcut” to mozzarella, since it uses a microwave to speed things along.  If you don’t have a microwave, you can use a pot of very hot water and float a bowl in it instead. The goal is to get the curds hot so that they melt together and become stretchy like taffy.
